For years, I avoided eggplant because I hated peeling off the skin. I had no idea it was a useless step. Only after I had eggplant served to me at a fancy restaurant with the skin on did I finally embrace this purple goddess at home.

Revive near-death eggplant by heavily salting each slice. Let it sit for a couple of hours. The salt draws out excessive moisture, springing the eggplant back to life. Rinse off salt when ready to start cooking.

Sprinkle with red pepper flakes for color and zing.

Serve with Capital Caesar Salad, Extra CROUTONS! (see Chapter 5).
